METAL FILTER




Recipe

    • 20g of freshly ground coffee (coarse grind, similar to sea salt)
    • 300ml of filtered water (heated to 93°C)




Instructions

  1. Prepare the Metal Filter and Preheat
    • Place the metal filter securely on top of your coffee server or mug.
    • Rinse the filter and preheat your server/mug by pouring some hot water through the filter. Discard the rinse water.
  2. Add Coffee and Bloom
    • Add 20g of coffee grounds into the filter, ensuring an even bed for uniform extraction.
    • Start by pouring 50ml of hot water in a controlled, circular motion, ensuring all grounds are saturated.
    • Allow the coffee to bloom for 30 seconds as it releases carbon dioxide, which improves extraction.
  3. Main Pouring Phase
    • At 0:30, continue pouring 200g of water in a slow, concentric motion, avoiding direct pours onto the filter’s edges.
    • Maintain a steady pour rate to ensure even extraction and avoid channeling.
  4. Final Pour and Drawdown
    • At 1:00, pour the remaining 100g of water in a similar controlled motion.
    • Allow the coffee to drain fully through the filter.
    • The total brew time should be between 2:30 and 3:00 minutes.
  5. Serve and Enjoy
    • Gently swirl the brewed coffee to incorporate flavors evenly.
    • Pour into cups and serve immediately for the best taste experience.
